Ingredients
  

  • 2 pounds boneless skinless chicken thighs
  • 3 tbsp extra virgin olive oil divided
  • 2 tbsp chopped fresh parsley leaves
  • 1 tbsp chopped fresh rosemary
  • 1 tbsp chopped fresh thyme leaves
  • 2 tbsp freshly squeezed lemon juice
  • 1 tbsp lemon zest
  • 1 shallot diced
  • 3 cloves garlic minced
  • Kosher salt and freshly ground black pepper to taste

Instructions
 

  • In a medium bowl, mix 2 tablespoons of olive oil with shallot, garlic, parsley, rosemary, thyme, lemon juice, lemon zest, 1 teaspoon of salt, and 1 teaspoon of pepper.
  • Place the chicken in a large bowl or a gallon-sized Ziploc bag, then pour in the olive oil mixture. Let it marinate for at least 2 hours or overnight, flipping the bag occasionally. Once marinated, drain the chicken.
  • Preheat the grill to medium-high heat.
  • Lightly brush the chicken with the remaining 1 tablespoon of olive oil and season with salt and pepper as needed.
  • Grill the chicken, flipping occasionally, until fully cooked and the internal temperature reaches 165°F, about 10 minutes.
  • Serve hot and enjoy!
