Ingredients
  

  • ½ cup butter softened
  • 1 cup sugar
  • 4 ounces cream cheese softened
  • 2 eggs
  • 2 cups flour
  • 1 Tsp pure vanilla extract
  • 2 Tsp baking powder
  • ½ Tsp baking soda
  • ½ Tsp Kosher salt
  • ½ cup buttermilk
  • 1 ½ cups strawberries rinsed dried and chopped

Instructions
 

  • Start by greasing and flouring a 9x5 inch loaf pan, then preheat your oven to 350°F.
  • In a bowl, use an electric mixer to beat together butter, sugar, and cream cheese until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  • In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gently mix the dry ingredients into the butter mixture until just combined.
  • Add the buttermilk, stirring carefully until incorporated—don’t overmix!
  • Finally, fold in the strawberries, being mindful that the batter will be thick.
  • Pour the batter into the prepared pan and bake for 50 to 60 minutes, or until golden and a toothpick comes out clean. Enjoy!
