- ½ cup butter softened
- 1 cup sugar
- 4 ounces cream cheese softened
- 2 eggs
- 2 cups flour
- 1 Tsp pure vanilla extract
- 2 Tsp baking powder
- ½ Tsp baking soda
- ½ Tsp Kosher salt
- ½ cup buttermilk
- 1 ½ cups strawberries rinsed dried and chopped
Start by greasing and flouring a 9x5 inch loaf pan, then preheat your oven to 350°F.
In a bowl, use an electric mixer to beat together butter, sugar, and cream cheese until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gently mix the dry ingredients into the butter mixture until just combined.
Add the buttermilk, stirring carefully until incorporated—don’t overmix!
Finally, fold in the strawberries, being mindful that the batter will be thick.
