Coffee cake:
- 1 ½ cups all-purpose flour
- ½ cup salted butter softened
- ½ cup granulated sugar
- 1 cup sour cream room temperature
- 1 ½ tsps baking powder
- ½ tsp fine sea salt
- ¾ tsp ground cinnamon
- 1 tsp pure vanilla extract
- 2 large eggs room temperature
Cinnamon Crumb Topping:
- ¾ cup all-purpose flour
- ¾ cup light brown sugar
- ½ cup salted butter softened
- 2 tsps ground cinnamon
Step 1: Preheat & Prepare
Step 2: Make the Crumb Topping
In a large mixing bowl, combine flour, brown sugar, cinnamon, and a pinch of sea salt. Cut in cold butter using a fork or pastry cutter until the mixture resembles large, buttery crumbs. Set aside for later.
Step 3: Prepare the Coffee Cake Batter
In a separate bowl, whisk together flour, baking powder, sea salt, and cinnamon. Set this dry mix aside.
Using a stand mixer fitted with a paddle attachment (or a handheld mixer), beat softened butter and sugar on high speed for about 1 minute until light and fluffy. Add in the eggs and vanilla extract, mixing just until combined.
Next, gradually add the dry ingredients while beating at medium-high speed. Finally, mix in the sour cream until the batter is silky smooth.
Step 4: Assemble & Bake
