- 1 pound pizza dough homemade or store-bought
- ¼ cup yellow cornmeal
- 2 cups leftover shredded rotisserie chicken
- 1 cup shredded smoked cheddar cheese
- 1 cup shredded whole milk mozzarella cheese
- ½ cup diced red onion
- 2 Tbsp olive oil
- 10 Tbsp BBQ sauce such as Stubb’s Original BBQ Sauce
- 3 Tbsp chopped fresh cilantro leaves
- Kosher salt and freshly ground pepper to taste
Preheat your oven to 450°F and get your baking sheet or pizza pan ready by giving it a light coat of olive oil.
Sprinkle some cornmeal over your work surface, then roll out your pizza dough into a nice 12-inch circle. Carefully transfer the dough onto your prepared baking sheet or pizza pan.
Using a small ladle (or the back of a spoon), spread a generous layer of BBQ sauce evenly over the dough, leaving a 1/2-inch border around the edges for that perfect crust.
Now it’s time to pile on the toppings! Add the chicken, both kinds of cheese, and sliced onion. Sprinkle with a bit of salt and pepper to enhance the flavors.
Pop your pizza into the oven and bake for 25 minutes, or until the crust turns golden and the cheese is beautifully melted.
